Packed with fragrant flavours, these prawns with ginger and spring onions are so quick, easy and delicious, you’ll be eating them and demanding a second helping before you know it!
Ingredients:
- 200g prawns
- 1 bunch of spring onions,
- cut into 2cm pieces
- 250g mushrooms, halved
- 6cm ginger, peeled and cut into matchsticks
For the marinade:
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- Pinch of white pepper
For the sauce:
- 4 tbsp water
- 1 tbs rice wine vinegar
- 2 tbsp oyster sauce
- 1 tbsp cornflour
Method:
- Put the prawns into a bowl with the marinade ingredients. Mix and set aside for 10 minutes.
- Heat 1 tbsp oil in a large frying pan or wok over a high heat. Add the ginger and stir fry for one minute. Add the prawns and cook for a further minute. Add the mushrooms and spring onions, stir frying for two minutes. Place a few spring onion tops into ice- cold water and leave for 5-10 minutes until they go curly.
- Add the sauce and reduce the heat. Simmer for two minutes and serve with the spring onion tops.
