Recently, we’ve been teaming up with chef Chris Baber to bring you simple, delicious recipe ideas that will help reduce the amount of energy you use and lessen your food waste. For example, he’s already shown us how to make a sumptuous bircher muesli and creamy salmon and leek parcels using really common, easy to find ingredients! This week, it’s a sweet and spicy peanut stir fry!
This week is no exception, although the focus has shifted a little bit. This week is food action week, so although the recipe still makes use of common store cupboard and fridge ingredients, we’re shining a light on it from a slightly different angle. This delicious peanut stir fry is quick, easy to make and uses ingredients you may already have in the kitchen. It’s also nutritious and full of everything you need to keep you going. Why not give it a go?
Sauce Ingredients
- 4 tbs coconut milk
- 2 tbs peanut butter
- 2 tbs dark soy
- 2 tbs sweet chilli sauce
- Juice 1/2 lime
- 1 tsp curry powder
Other ingredients:
- 1 onion thinly sliced
- 1 carrot cut into match sticks
- 1 small handful sugar snap peas halved
- 1 red pepper thinly sliced
- 2 cloves garlic finely chopped
- 1 red chilli finely chopped
- 2 portions straight to wok rice noodles
Optional garnish:
- Juice half lime
- 2 tbs Peanuts crushed
- Spring onions sliced
Method
- Prep all of the veg and set aside
- To make the sauce simply mix all ingredients together and set aside
- Heat a wok or non-stick frying pan over a high heat with a splash of oil
- Stir fry the onions, carrot, garlic and chilli for a few minutes until the onion begins to soften (If the pan becomes very dry add a tiny splash or water)
- Add the sugar snap peas and pepper, stir fry for a further 2 minutes
- Add the noodles and stir fry for 1 minute, then pour in the sauce, toss together evenly coating all ingredients in the sauce, cook for another minute and turn off the heat
- Serve with a squeeze of lime, coriander / spring onion / crushed peanuts
- Pour over the sauce and serve
