A delicious and luxurious weekend treat of a breakfast or brunch to share with the whole family. This one’s great for getting the kids involved, too, making it fun for everyone!
Ingredients:
- 2 thick slices of sourdough bread
- 2 eggs, lightly beaten
- 1 tbsp milk
- 60g unsalted butter
- 1/4 tsp cinnamon
- 400g fresh straw-berries, halved
- 2 tbsp Greek yoghurt
- 2 tbsp honey
Method:
- In a bowl, mix the eggs, milk and cinnamon with a pinch of salt.
- Heat half of the butter in large frying pan over a medium heat. Dip each slice
of bread into the egg mixture, ensuring it is evenly coated. Fry the bread for
two minutes on each side until golden. - Meanwhile, heat the remaining butter in a separate large frying pan over a
medium-high heat. Add the berries with a splash of water. Cook for 2-3
minutes until slightly soft and jammy. - Divide the toast between serving plates and top with Greek yoghurt followed
by strawberries. Drizzle with honey.
